Us folks in Perth would be familiar with Hattendo - a lovely cream puff bakery which was first started in Hiroshima in 1933. Perth's Hattendo branch was located in the Melbourne Hotel before it sadly closed down due to the pandemic.
We originally wanted to visit PIPES by HATTENDO to get more of Hattendo's delicious pudding gula melaka which we had at Sushiro. But then found out it was exclusively produced for Sushiro 😥! Not only is it the main producer of cream puffs, but also doubles as a brunch cafe specialising in sando (Japanese sandwiches), a coffee roastery and a bar at night.
PIPES by HATTENDO's range of shokupan sando feature a variety of Japanese inspired flavours (like saba, tonkatsu and wagyu), and South East Asian flavours like otak otak and lemongrass chicken.
The shokupan, which literally means "eating bread" is made entirely by Hattendo from 100% echire butter - a type of butter that exclusively comes from Echire in Western France, a region known for excellent dairy products. Echire butter has a light yoghurt like acidity and a rich aroma.
As for flour, a special Hattendo blend of flour made by NISSIN Seifun is used. The Hattendo original flour has a rich and milky taste, according to Hattendo.
We genuinely wanted to try everything so we ordered three sandwiches to share between two, and we must say that the sandwiches are substantial (one each is definitely enough). Each shokupan sando was delightfully light and fluffy, and the fillings were girthy. We particularly enjoyed the garlic prawn - full of massive prawns and nitamago potato salad sando which had the classic Japanese potato salad.
While we didn’t get to try their cream puffs, PIPES by HATTENDO also do a range of custard cream puddings which we've had in Perth and absolutely loved.
