The details 📝
Ramen Keisuke Tonkotsu King is the franchise of Keisuke Takeda, a Japanese celebrity chef. Takeda-san started his career in a French kitchen, where he spent a decade working there before working in Japanese kitchens. As of April 2022, Takeda-san has an impressive number of restaurants scattered across Singapore, Australia and Japan, nearly four dozen (approaching a similar number of restaurants Nobu Matsuhisa operates).
Ramen Keisuke opened its Perth doors in 2018 as part of the $40 million redevelopment of The Melbourne Hotel. Paige and I like to call 2018 "the year of tonkotsu* ramen", given the number of speciality tonkotsu ramen restaurants opened that year - Hakata Gensuke, Ippudo and Bari Uma to name a few. Tonkotsu ramen is characterised by it's thick, flavourful pork broth, and is the type of ramen that the well known restaurants Ichiran or Ippudo are famous for serving.
Prior to the influx of tonkotsu ramen restaurants in 2018, Perth diners could only get their tonkotsu ramen fix from small handful of restaurants. We previously would satisfy our tonkotsu ramen cravings at Zensaki (where Main Street Ryu now is) or at our local, Kai Japanese. Now in 2022, diners are spoilt for choice, with Ramen Keisuke, Hakata Gensuke, Bari Uma and Ippudo, all serving up, porky, brothy, ramen.
*Note don't get tonkotsu and tonkatsu mixed up! Tonkotsu literally translates to "pork bones" (tonkotsu ramen) while tonkatsu translates to "pork cutlet" (e.g. the deliciously deep fried pork).
Like the Hataka Gensuke, Ramen Keisuke does not take bookings and is strictly walk in only. Orders are taken on a small order form, allowing you to customise the taste of the soup, flavoured oil, noodle texture, soup temperature and to omit toppings. Personally, I find Ramen Keisuke's tonkotsu ramen to be the thickest and richest when compared to Hakata Gensuke, our usual go to. Because of that, I prefer ticking the "hot" soup temperature. In terms of flavour, you can expect a strong, rich, pork broth filled with collagen.
Dine in customers also can make use of the free hard boiled eggs (note these are not flavoured "ajitama") and beansprouts.
If you prefer something spicy, the black spicy tonkotsu or red spicy tonkotsu is your pick. We haven't tried the red spicy tonkotsu, but we found the black spicy tonkotsu to be quite peppery.
